Tomato Sauce With Italian Sausage

I just made THE best authentic Roasted Tomato Sauce recipe and I just had to share it!  I made this with Italian sausage from my favourite organic grassfed farm and it was out of this world.  This Tomato Sauce with Italian Sausage was a huge hit with my kids and husband – a huge win for me!  Serve this over spaghetti squash, or brown rice pasta for a delicious, healthy dish.  It is also a great healthy school lunch recipe!

1.  Preheat a large pan over medium heat, and cook italian sausages until no longer pink.  Remove from pan and set aside.  Once cooled, slice Italian sausage.

2.  In the same pan, saute onions, carrots, celery, and parsley 5 minutes.  Add sea salt and pepper and saute 2 minutes longer.  Remove from pan.

3.  Return Italian sausage to pan and add sea salt, pepper, and thyme.  Cook for 2 minutes, stirring meat.  Add beef broth and bring to a boil, letting it partially absorb into the meat.  Once broth has started to reduce, add cooked carrots, celery, and onions back to the pan.  Add in tomato paste, roasted tomatoes, and water.  Stir well to combine.  Let simmer for 20 minutes before serving.
