The perfect summertime salad, this dish is bursting with fresh flavour! A perfect easy and healthy side dish to a BBQ. It is so delicious it can also be eaten alone as a light meal.
-1/4 Cup red onion, finely diced
-1 lb cherry tomatoes, halved
-1 Clove garlic, minced
-Sea salt and pepper to taste
-2 Tbsp apple cider vinegar
-1/4 Olive oil
-1 Red pepper, diced
-1 Cucumber, quartered and sliced
-1/4 Cup fresh dill
-1/4 Cup Feta cheese
Combine all ingredients, and chill for one hour before serving.
