Thai Chicken Salad

This is my all-time favourite summertime meal! Make your vinaigrette ahead of time, and this is a great meal that can be eaten anywhere. My favourite way to eat this is lying on the back of my boat soaking in the summer sun, or at a picnic by the pond with my girls!

Salad

-2 chicken breast, cooked and diced
-1 large head lettuce
-1 cup shredded cabbage
-1 large carrot, grated
-1/2 cup green onions
-1/2 cup fresh cilantro

Toss the salad with the dressing and divide among bowls.

Vinaigrette

-1 clove garlic
-1/2 tsp hot pepper sauce
-2 tbsp tamari
-1 tbsp vinegar
-2 tbsp honey
-1 tbsp fresh lime juice
-2 tbsp olive oil
-1/2 tsp fish sauce
-1/4 cup peanut butter
-1/4 cup water, more or less to desired consistency

Combine all ingredients in a jar and shake well.
