I am always looking for new delicious ways to enjoy the bounty of fresh summer produce, and this Strawberry Summer Salad is going to be a staple in my house this summer!

The fresh taste of local, spring lettuce is a delightful treat after months of store-bought lettuce!  The taste is beyond compare!  And, if you are looking to exercise your green thumb, you can easily grow your own lettuce in your backyard, even if you don’t have a garden!  I have planters full of baby lettuce that I replant every 3 weeks so I have a continual supply of fresh lettuce all summer long!  Last year, I didn’t buy any lettuce from the store or farmers market from June-October!  It was a sad day when my home-grown lettuce was done for the year.  I ended up throwing out half of the lettuce I bought, because I could hardly enjoy it after being spoiled all long with the freshest, most nutritious leafy greens.

This Strawberry Summer Salad is the perfect way to utilize some of the amazing produce available this time of year!  I LOVE baking with rhubarb, and so excited to have a new way to enjoy it!  I have three beautiful rhubarb plants in my backyard (another easy plant to grow!), and never even come close to using all that it produces, so I am excited to be able to use more rhubarb this year in the delicious salad!

And fresh, summertime strawberries……they are like nature’s candy!  SO delicious and bursting with flavor!  I highly recommend finding a local u-pick in your area – it really doesn’t get better than that!  This spring, I planted an amazing strawberry patch at my dad’s farm consisting of 2,000 plants and I cannot wait to start enjoying the fresh strawberries in a couple weeks!   Strawberries are #1 on the EWG’s Dirty Dozen list, so it SO important to purchase organic strawberries, especially for kids!

Enjoy the fresh flavours of summer in this Strawberry Summer Salad all summer long!

1.  Boil rhubarb in a small saucepan with the water about 5 minutes, or until tender.

2.  Place rhubarb in a nutri-bullet with remaining vinaigrette ingredients, and blend until smooth.

3.  In a large bowl, mix salad ingredients and top with about 1/2 cup of Rhubarb Vinaigrette.
