Rainbow Salad

The homemade vinaigrette in the recipe is simply divine. Make a double batch and use it all week for a fast and easy side dish to all your meals. This salad goes perfectly with any meat dish for a simple complete meal. My favourite is to have it with my crock-pot pulled chicken!

Salad

-1 Large romain heart
-2 Cups shredded purple cabbage
-2 Large carrots, grated
-1 Large apple, diced
-1/2 Cup raw sunflower seeds
-1/2 Cup dried cranberries (unsweetened)
-1 Tbsp finely chopped mint (optional)

Vinaigrette

-1/2 Cup olive oil
-3 Tbsp Red wine vinegar, or apple cider vinegar
-2 Tbsp raw honey
-1 1/2 Tsp dijon mustard
-1/4 Tsp sea salt
-Pinch of pepper

Mix all ingredients in a mason jar and shake vigorously until emulsified.
