Quinoa Quiche

A delicious and filling meal that is easy to prepare, and is great leftover to take to work the next day. I love the simplicity of this meal, and the combination of eggs and salsa is absolutely amazing. If you want a little more substance to this meal, add some diced chicken or sausage from your favourite local organic farmer.


-4 free range eggs
-1/2 cup milk
-1/4 cup salsa
-1 cup diced red peppers, lightly sauted
-Sea salt and pepper to taste

Pour egg mixture onto quinoa curst and bake for 30 minutes, or until golden brown and set in centre.

*The variations of the dish are endless! Be creative and use whatever vegetables you have on hand. Asparagus or roasted beets are delicious!
