Egg & Spinach Scramble

This Egg and Spinach Scramble recipe is the perfect hearty breakfast to power you through your morning!  Simple, delicious, and filling this is a great healthy breakfast recipe to start the day.  I sometimes even have this delicious egg scramble for supper!  If you are feeling really hungry, have it with a side of avocado toast on a piece of wholegrain sourdough bread.

I recommend purchasing organic free-range eggs locally, if possible!  The quality of your ingredients matter!  You can tell how healthy the chicken was by the colour of the yolk.  You want to have a nice dark yellow yolk, opposed to a pale yellow looking one.

Melt the coconut oil in a cast iron skillet.  Lightly saute the peppers and spinach until the spinach is wilted.  Meanwhile, in a bowl, whisk the eggs, salsa, sea salt & pepper, and green onions.  Pour egg mixture over the peppers and spinach, give a stir to combine, and continue cooking until the eggs are cooked through.
