Creamy Potato Soup

Creamy Potato Soup is one of the ultimate comfort foods.  So creamy and delicious, and so satisfying too!  Potatoes are a great source of vitamin C and B6.  Vitamin B6 is involved in more than 100 enzymatic reactions, and is active virtually everywhere in the body!  Potatoes are also a great source of potassium, magnesium and phosphorus.  Potatoes are an excellent source of nutrients, and have unfairly got a bad rap.  There are so many delicious ways to eat potatoes, try them out in this soup today!

1.  In a medium soup pot, add 1 tbsp olive oil, onions, and celery.  Saute 5 minutes until onions begin to soften.  Add sea salt, pepper, and herbamare.  Saute 2 mintues longer.

2.  Add potatoes and half a cup water.  Lightly saute until potatoes just begin to soften.  Add broth and bring to a boil.  Reduce heat to low, and simmer 15-20 minutes, or until potatoes are fork-tender.

3.  With an immersion blender, blend soup until smooth (I sometimes like to leave it a little chunky).

4.  Add bacon, green onions, and cream.  Stir to combine.  Serve in soup bowls and top with cheese and additional green onions, if desired.
