Chocolate Zucchini Bread

Chocolate Zucchini Bread Recipe

Chocolate Zucchini Bread should be a staple in your house this time of year, especially if you have kids!

This is the best Chocolate Zucchini Bread recipe, and it’s so easy to make!  If you garden, or have any gardening friends, you know that there is abundance of zucchini everywhere you turn at this time of year.  There is a joke among gardeners that you can’t pay someone to take your extra zucchini.  I beg to differ though – take all of that goodness you can get!

Zucchini is one of those amazing vegetable crops that produces a crazy amount of food from one little seed.  In fact, if you ever want to feel abundant in your life, plant a zucchini plant or two!  You will have far more zucchini than you will know what to do with!  You will soon be one of those people hiding your zucchini in your visitors vehicles to try and get rid of it…

Even if you don’t have any gardening friends, you can buy zucchini so cheap at the farmers market.  I saw them for sale at the farmers market this weekend for $1 each!  Who says eating healthy is expensive!?!  Fresh zucchini is only around for a short amount of time, so take full advantage of it while you can!

This is my favorite no-fail zucchini bread recipe, and is a HUGE hit with kids and an easy way to sneak some extra vegetables into their diet.  This bread freezes well too, and would be a great addition to school lunches!

1.  Preheat oven to 350 degrees.  Grease a 9×5 loaf pan with butter or coconut oil.

2.  In a mixing bowl, mix together butter, coconut oil, and coconut sugar until well combined.  Add the eggs, vanilla extract, and grated zucchini.  Stir until well combined.

3.  Add in cacao powder, baking soda, and flour.  Stir until just combined.  Add Chocolate chips and give it one last stir.

4.  Pour into loaf pan.  Bake in oven for 50-55 minutes.

5.  Remove from oven and let sit for five minutes.  Run a knife around the edges of the pan.  Remove loaf and let cool on a wire rack.
