Chocolate Chip Banana Muffins

Preheat oven to 375.

In a mixing bowl, combine butter, coconut sugar, and egg.  Mix well with a whisk or electric beater.  Mash bananas and add to butter mixture.  Stir to combine.  Add baking powder and baking soda and give a quick stir.  Add flours, and stir until just combined (do not over mix).  Fold in chocolate chips.

Line a muffin pan with parchment baking cups.

Fill cups about 2/3 full.

Bake for 18-20 minutes.

Remove from pan, and let cool before eating.

If you want to make banana bread instead of muffins, place batter in a greased bread pan, and bake at 325 for 60 minutes.
